Given Sandals St. Lucia honeymoon and want to know how easy it is to explore the island?

We are considering Sandals St. Lucia for our honeymoon May and had to love to hear some experiences. I have made many trips and I am determined to explore all I can when I'm there. Is it possible to get out and go hiking in the park? Is there some way to go fishing while we're there? What kind of sandals sponsored / adventure partner there? I know that in Jamaica there is rafting and mountain biking, have similar things to do in St. Lucia? I welcome any and all advice and information, thanks so much!
