What would you do on a date… if you just met her… and she was going away for 8 MONTHS!?!

any ideas what you would do on your last day(s) with a girl you only just met… (but really have an awesome connection with).
WHat did i have in mind?
I was thinking… a little bike ride through Niagara on the Lake to Niagara Falls…. wine tasting…. picnic lunch… then spend the rest of the day on a beach!
any other suggestions?
