How long can you go with potable water before leaving to prevent dehydration?

I ask this question because I go by bike for long periods of time If I can not carry water to become dehydrated while I'm away from my bike what should I do? What are the symptoms of dehydration? I 15 years i ride my bike about 4 or 5 times every other day on my bicycle going spedometer says an average of 25 miles per hour and told me there was some 80 miles from the road last time I'm 142 pounds and my height is 5'9 "
